Confession: I'm SUPER ready for fall! It's still hot here until October, but here "autumn" actually begins in September. And I will be READY! We set up our fall decorations, I grab some of my favorite fall playlists and movies (I'm looking at you, you have a message!), and we start preparing some of our favorite fall dinners.
It's hard to beat Chili in the Fall! A good chili is spicy, cozy, comforting and easy. Plus, leftovers are the gift that keeps on giving! This easy slow cooker chili recipe is one to add to your regular rotation. It has the perfect combination of spices and spices, just enough, AND it can be made in the slow cooker or Instant Pot!

WHAT'S IN THIS SLOW COOKER CHILI?
My Chili has a lot of "classic" ingredients + a few little tricks to help you get the most out of each ingredient. I entered this into myself:
AN UNEXPECTED BASE.I start building the flavor with a few slices of bacon, which gives the chili a rich, smoky note without making it heavy. Then I use chicken sausage instead of the standard ground beef. Love that it's light but tastes BIG!shoots(No weird ingredients, no weird preservatives!) but you can really play around with it by mixing up the flavor and type of sausage of your choice!
SOME DELICIOUS VEGETABLES.After the meat is cooked I add some chopped peppers and onions along with the garlic and a can of chopped green peppers. The flavor combination is AMAZING and I love how the flavors blend as it cooks.
A MIX OF BEANS.This adds color and texture. I went for a mix of pinto beans and kidney beans, but of course you can add a few black beans for a change. Sprouts carry low sodium organic beans which are my FAVORITE. (So affordable and high quality!)
SOME CHILE CLASSICS.So you'll find standards like diced tomatoes (I like fire roasted!), tomato paste, and some broth. You get a little smokiness from the tomatoes, which affects the thickness and flavor of the tomato paste and broth combination. He is so cute.
A DELICIOUS BLEND OF SPICES.I use a combination of chilli powder, cumin and some smoked paprika to add depth. Then I add a little salt and pepper to tie things together. Once again, Sprouts comes to the rescue with quality, affordable, organic seasonings and spices! I love that their chili powder doesn't have any added salt.
CHILI RECIPES - WHAT TO DO WITH CHILI FROM THE SLOW COOKER?
Chili is one of those wonderful foods that keeps coming back, and leftovers taste even better than day one! You can simply freeze half of the recipe for later, or use the leftover peppers for one of these tasty ideas:
- GINGER PIE AND CORN BREAD (PASTEL DE TAMALES). BeGingerbread CakeIt's one of our FAVORITE dinners, especially in the fall. It's a complete meal that the whole family will love!
- SPICY MACRONI.only loveSpicy Noodlesif boy! Add the peppers to the cooked macaroni and garnish with cheddar or non-dairy cheddar. Bake until heated through and bubbly!
- CHILI DOGS.Not the healthiest, but certainly fun every now and then! Add a tablespoon of paprika to a hot dog or grilled sausage.
- STAR OF CHILE SUPREME BEAN. BeIt's something my grandmother used to make for us when we were visiting. It has a crunchy vibe but is a little lighter.
- SWEET POTATOES STUFFED WITH PEPPERI have my methodperfect roasted sweet potato here.You can use this chili in my chili rellena version. SO GOOD!
- SPAGHETTI WITH CHILI BOATS –ThisYou're so good! Sprinkle the spaghetti with a large spoonful of pepper and add a few of your favorite toppings.
- SALTY TACO/FRITO CAKE- You can top tortillas or corn tortilla chips with a tablespoon of pepper and then assemble them taco style with lettuce, tomato, onion, guacamole, etc.
- „PALHEIROS“ TEX-MEX– My mother used to do this all the time. Similar to the Taco Salad/Fritto Cake option, simply place the remaining hot chili on a bed of cooked rice and add your favorite taco toppings.
FREQUENTLY ASKED QUESTIONS ABOUT THIS SLOW COOKER CHILI
CAN I USE A DIFFERENT SAUSAGE STYLE IN THE CHILI?Yes! I only recommend using ground/loose sausage instead of pre-cooked sausage (the kind you can slice) for this chili. This time I used Sprout's Green Pepper Chicken Sausage, but you can easily swap out your favorite chicken, turkey, or pork sausage. You can play around with the flavor profile using breakfast sausage, Italian sausage, chorizo flavored sausage, etc.
CAN I USE MINCED BEEF INSTEAD OF SAUSAGE?Yes! If you like, you can substitute chicken, turkey, pork, or beef for the ground sausage in this chili. You might want to increase the spices a bit to compensate. (Just taste and adjust the chili as you go)
CAN I JUST “LEAVE AND GO”? INSTEAD OF COOKING THE MEAT FOR THE CHILI FIRST?Big question! ("Dump-and-go" is adding all the ingredients to the slow cooker without first cooking them.) I *recommend* cooking the bacon first at the very least, but you can pop the raw sausage in the Slow cooker give cook and share after cooking. (Chicken sausage contains less fat, so you don't end up with a greasy chili. If you're using pork sausage, you can par-cook it to drain off the excess fat before adding it to the chili.)
CAN I FREEZE SKINS?Bet! The chili freezes and thaws wonderfully. I put it in freezer bags and lay them flat until frozen. (Place the pouches on a plate, cutting board, or baking sheet while they freeze so they can be frozen.) Because they freeze thinner laid flat, they also thaw quicker! Thaw in the refrigerator or in a bowl of cold water for a few hours in the fridge or about an hour on the counter.
CAN I MAKE THIS CHILI IN THE INSTANT POT?Yes! I've included the Instant Pot/Pressure Cooker instructions in the recipe card below. It is suitable for pressure cookers!
CAN I COOK THIS PEPPER ON THE STOVE?Absolutely. I've also included the hob instructions in the recipe notes below.

- 4Bacon slices (turkey or pork), diced
- 1Pound chicken sausage, such as Sprout's Green Chili Chicken Sausage* (unpack if necessary)
- 1medium onion, chopped
- 1red peppers, diced
- 1green peppers, diced
- 2(15-ounce) canned pinto beans, drained (such as Sprouts brand organic pinto beans)
- 1(15 oz) kidney beans, drained (such as Sprouts Organic Kidney Beans)
- 2(14 oz.) cans or 1 (28 ounces) can chopped or diced grilled tomatoes
- 1Can (6 ounces) tomato paste, such as Sprouts brand organic tomato paste
- 1(4 ounces) green peppers (do not drain) (such as Sprouts brand diced green peppers)
- 2chopped garlic cloves
- 2 tablespoons. chili powder such as B. Sprouts brand
- 1 1/2 teaspoons. Cumin, like Sprouts brand
- 1/2 teaspoon. smoked paprika
- 1/2 teaspoon. Sal
- 1/2 teaspoon. Pfeffer
- 3 BagsVegetable broth (you can substitute chicken or beef broth), such as B. Sprouts brand
Optional, for decoration(Choose 1-2): Chopped Fresh Coriander, Sliced Spring Onion, Chopped Chives, Sliced Jalapeno.

SLOW COOKING INSTRUCTIONS:
- In a medium skillet over medium-high heat, sauté the bacon until golden and crispy. Transfer the cooked bacon to the slow cooker. Pour off the remaining fat.
- Add the chicken sausage to the same skillet and cook over medium-high heat for 5 to 7 minutes, or until the chicken sausage is cooked through. (There may be some water/liquid in the pan. Don't worry about draining.) Add the cooked sausage and the remaining liquid to the slow cooker.
- Add onion, bell pepper, kidney beans, kidney beans, tomatoes, tomato paste, green peppers, garlic, chili powder, cumin, smoked paprika powder, salt and pepper to slow cooker.
- Pour the broth over everything and stir.
- Cover with a lid and cook 6-8 hours on LOW or 3-4 hours on HIGH.
- Remove lid and garnish with chopped coriander, chopped spring onions or chopped chives, if you like.
INSTANT JACKPOT INSTRUCTIONS:
- Press the SAUTE button on your Instant Pot and add the bacon. Cook until golden. Remove bacon from pan and reserve. Slightly tilt the instant pot to one side and use a spoon to drain excess fat, if desired.
- With the Instant Pot still on the SAUTE setting, add the chicken sausage and cook until cooked through. (Don't worry about draining residual liquid)
- Return the cooked bacon to the Instant Pot with the sausage. Add onions, peppers, kidney beans, kidney beans, tomatoes, tomato paste, green peppers, garlic, chili powder, cumin, smoked paprika powder, salt and pepper.
- Pour broth over everything, add 1/2 cup water and stir to combine.
- Cover with the lid and press CANCEL to stop the sauté setting.
- Make sure the vent is plugged, then set the pressure to MANUAL for 15 minutes.
- When you're done cooking, allow the pressure to evaporate naturally for 5-10 minutes before gently opening the vent to quickly release any remaining steam.
- Carefully open the lid, stir and garnish as desired.
