- Salt:I like kosher salt, but you can use any salt you like.
- Pfeffer:Freshly ground or freshly ground black pepper.

For baking, you want a "floury" potato rather than a "waxy" potato. Waxy potatoes are the kind that remain firm and keepable even after cooking, like the potatoes in potato salad. Red potatoes and new potatoes are waxy varieties.
