It's official... I've discovered my new favorite way to cook (and eat) potatoes! These slow cooker potatoes are the definition of easy and delicious. All you need is a handful of pantry ingredients and a slow cooker. Before you know it, you'll be sticking your fork into the simplest, most delicious dish. The preparation is minimal enough to repeat for weeknight dinners, but this homey classic recipe also makes a great addition to the holiday table!

This recipe couldn't be easier to make and is one of my favorite side dishes for busy weeks or fun gatherings with family and friends.

Just add baby potatoes, olive oil, garlic, and salt to the slow cooker and let the slow cooker work its magic.

Once cooked, you can add any fun extras you like (like fresh herbs, an extra drizzle of olive oil, or flake salt) and it's ready to eat!

Why the slow cooker is a great option for preparing vegetable side dishes

I love using the slow cooker because it makes it so easy to add vegetarian side dishes to any meal.

And since almost all of my slow cooker vegetables aredump and go(meaning no pre-searing or sautéing necessary) preparation is quick and easy.

Just cut, stir and go!

As a bonus, the slow cooker takes the pressure off the oven and stovetop, making it a fantastic choice for dinner parties, parties, and holiday cookouts.

The best potatoes for the slow cooker

Look for small potatoes, 1 to 2 inches in diameter.

Small waxy red or yellow unpeeled potatoes work, as do baby and baby potatoes.

When the potatoes are on the larger side, cut them in half lengthwise.

You can also use a mix of potatoes (like the pictures you see here) - I used a mix of baby yellow potatoes and small red potatoes, and to ensure even cooking, I cut the red potatoes in half so everything cooked evenly. .

Papas:Small unpeeled potatoes (such as small red potatoes, small yellow potatoes, or even baby potatoes) work best in this recipe. You can even use a variety of them mixed together. Keep in mind, however, that this method will not work on large red potatoes. Extra virgin olive oil:I love the light, buttery flavor of the extra virgin olive oil in this recipe. However, you can also use any other unflavored oil, such as avocado, vegetable, or canola oil.

Garlic cloves:Minced fresh garlic definitely enhances this easy recipe, but if you're short on time or don't have one on hand, you can substitute 1 teaspoon of granulated garlic powder.

sal kosher:Look for kosher salt at the grocery store along with regular iodized salt (it has a more subtle flavor). Use less iodized salt if you have it on hand.

More Fun Rry Variations

If you want to add more vegetables to the potatoes: Add 1 pound carrots, washed and cut on a 1-inch diagonal in place of 1 pound potatoes.

If you want to make garlic and herb potatoes:Add chopped fresh herbs (for example, parsley, basil, thyme, or rosemary) after cooking and stir while the potatoes are still hot. Also, be sure to use fresh garlic (instead of garlic powder) for maximum garlic flavor.

If you want to make Garlic Parmesan Potatoes:After cooking, simply sprinkle some fresh Parmesan cheese (traditional or vegan Parmesan) over the potatoes. I like to add mine before serving for the best flavor.

Ingredients

  • 2 Libra small potatoes,unpeeled (for example, small red potatoes, yellow potatoes, or new potatoes)
  • 2 soup spoon extra virgin olive oil
  • 3 Garlic cloves,hacked
  • ½ teaspoon sal kosher

Optional service suggestions

  • Chopped fresh herbs (for example, parsley, basil, thyme or rosemary), sea salt flakes

  • Place potatoes, olive oil, garlic, and salt in a 6-quart slow cooker and stir. Cover and cook until potatoes are tender, 3 to 4 hours maximum or 5 to 6 hours minimum. Don't find out during this time.

  • Uncover, stir and taste, adding more oil or salt if necessary. Mix with herbs and sprinkle with sea salt flakes if necessary. Serve immediately.
