What are red potatoes?

First we define the potato:red potatoesThey are a type of large potato with a thin, brown skin and a dry, very starchy texture on the inside. The high starch content makes Russets a fabulous potato for all kinds of cooking methods, including extra fluffy mashed potatoes, potato salad, French fries, and baked potatoes.
In the United States, russets are by far the most popular potato variety due to their availability and texture, and are often referred to as Idaho potatoes.

Differences between potatoes.
Russet potatoes are similar to Yukon potatoes. However, they have a higher starch content and a white flesh color, while Yukon Golds are yellow on the inside. While Yukon Gold has a more pronounced base flavor, the reds create onelighter consistencywhen preparing mashed potatoes and a creamier consistency when preparing soups.
New potatoes, also known as waxy potatoes and red potatoes, are a different story... New potatoes have a paper-thin skin and a much lower starch content. They tend to hold their shape better when cooked, but they don't have the same fluffy, starchy texture.
Waxy potatoes also taste sweeter than red potatoes, so they're great for herb roasting or dicing and cooking in soups because they hold their shape and don't fall apart.

What are the best cooking methods for Russet potatoes?
In my opinion, there are no bad recipes with red potatoes. They are fabulous as baked potatoes, diced baked potatoes, buttered boiled potatoes, boiled potatoes for potato salad or mashed potatoes, hash browns, and of course, French fries too.

How to bake a russet potato in the oven
Preheat oven to 450°F. Line a rimmed baking sheet and place whole potatoes on the baking sheet. Soak the potatoes in olive oil and rub the potato skin on all sides. Sprinkle generously with salt and pepper.
Then bake for 50 to 65 minutes until just tender.

Perfect baked potatoes
Preheat oven to 450°F. Open a large baking sheet and cover with parchment paper or aluminum foil. Cut the potatoes into 1-inch cubes. Place them on the baking sheet. Then drizzle 2 tablespoons of butter or oil over the potatoes and toss well to coat.
Spread the red potatoes in an even layer, making sure they don't touch each other. Sprinkle generously with salt, pepper, and any other herbs or spices!

Bake the potatoes for 20 minutes. Then remove from the oven and flip the potatoes. Bake for another 10 minutes, until the potatoes are crisp on the outside but soft on the inside.

Crispy French Fries in the Air Fryer
In the hot air fryer you can prepare fantastic "baked potatoes". You can also make French fries in the deep fryer!
For easy air fryer baked potatoes, heat air fryer to 400°F. Arrange 1-inch diced potatoes in air fryer basket in a single layer. Make sure the potatoes are not touching. Spray potatoes generously with cooking spray. Then season generously with salt, pepper, and other spices to taste.

Fry the potatoes for 10 minutes. Then shake the basket vigorously to turn the potatoes. Cook for another 5 to 10 minutes until the potatoes are tender.
