I have nothing against canned mushroom soup. It's just that homemade creamy sauce tastes way better than canned. You can taste the difference in the casserole dish!

This easy recipe is so flavorful and has all the flavor of a classic green casserole. No cream soup needed! And no mushy green beans either.

It's fresh, delicious and has so many different flavors. But the real star of the show is the homemade crispy fried onions! It really takes this dish to the next level! You can definitely use bought french fries here. But if you have time, make the homemade ones! Crispy on the outside with spring onions in the middle...they're so good and the perfect accompaniment to this creamy green bean casserole!

The best part is that this dish was made ahead of time! Prepare the green bean and mushroom mixture and add to the pan. Then save the onion topping and cheese to add on top when ready to toss and our fridge for baking!

INGREDIENTS FOR A HEALTHIER GREEN BEAN INTAKE

Crispy Onion - If you prefer fried (or are short on time), French onions can be used.

Green bean stew:

  • Green beans– I used fresh green beans. I wouldn't recommend using canned green beans here.
  • olive oil
  • Odor-I used baby bella mushrooms.
  • Flour-I used wheat flour. You can also use gluten free flour. I would recommend a 1:1 baking flourBob's Red MillÖKing Arthur GF Harina measure for measure.
  • Leche-I used 2% milk. You can also use unsweetened almond milk, coconut milk, oat milk, or any milk of your choice.
  • Mayonnaise-I used light mayonnaise.
  • dijon Senf
  • Balsamico-GlasurIt really adds a lovely flavor to this delicious green bean casserole! if you needed it You can try replacing it with Worcestershire sauce.
  • Ranch Spice Blend
  • Sal
  • black pepper
  • Queso-I used Gruyere cheese. The Gruyère gives it a rich creaminess that goes perfectly with the sauce. But you can really use any cheese here. Parmesan cheese would also go down well!

HOW TO... MAKE

Preparing the Crispy Onions:Preheat oven to 450 degrees F. In a large bowl, mix onions with olive oil and add flour, panko, and salt. Spray a baking sheet with cooking spray and evenly distribute the onions in the pan. Put the baking sheet insidehalfOven rack and bake for 25-30 minutes (or until lightly browned and crispy). Stir a few times and level the pan as needed to keep the onion from burning. When done, remove from the oven and set aside. Reduce the oven temperature to 350 degrees F.

Prepare green beans:While the onions are cooking, prepare the green bean mixture. Bring a large pot of water to a boil and add 1 tablespoon of salt. Add the green beans and cook for 7-9 minutes or until the green beans are tender, then quickly rinse under cold water. For now, keep the green beans in a colander in the sink.

Cooking mushrooms:Heat the oil in a large skillet over medium-high heat and add the mushrooms. Cook, stirring constantly, about 7 to 8 minutes or until mushrooms are tender.

Make the sauce:Sprinkle the flour over the mushrooms and stir until the flour is evenly distributed. Then slowly add the milk and bring the mixture to a boil. Cook for 10 minutes, stirring constantly, until a thick sauce forms. Add mayonnaise, dijon, balsamic glaze, ranch seasoning mix, salt and pepper.

Roast meat:Spray a 9x13-inch skillet with cooking spray. Spread 1/3 of the sauce onto the prepared baking sheet. Garnish with cooked green beans and garnish with remaining sauce. Sprinkle with cheese and onions and bake covered with foil for 15 minutes. Uncover and bake for another 10-15 minutes. If the onion starts to brown too much, cover the dish with aluminum foil. Serve hot and enjoy!

STORAGE

Store leftovers of healthy green bean soup without mushrooms in an airtight container or cover with plastic wrap in the refrigerator for up to 3-4 days.

Canned green beans tend to get mushy when roasted, so I'd stick with fresh ones! But I know a lot of people prefer to take it out of the can, so if you are, take it. Just make sure you drain them well and then add them in like you would the fresh ones on the recipe card.

  • 2 small onions, thinly sliced ​​(300g)
  • 1 tablespoon olive oil (15 g)
  • 1/2 cup all-purpose flour (60 g)
  • 1/4 cup panko breadcrumbs (14g) plus more for dusting
  • 1/2 teaspoon salt

Green bean stew:

  • 2 pounds fresh green beans, trimmed and halved
  • 2 tablespoons olive oil (30 g)
  • 8 ounces. Baby bella mushrooms, sliced
  • 3 tablespoons wheat flour (21 g)
